Fresh Chimichurri Sauce

Ingredients

  • Large handful fresh parsley, finely chopped

  • 1 tbsp fresh oregano, finely chopped

  • 2 garlic cloves, minced

  • 1 small red chilli, finely diced

  • 4 tbsp extra virgin olive oil

  • 2 tbsp white wine vinegar

  • Salt & black pepper, to taste

Method

  1. Finely chop the parsley, oregano, garlic, and red chilli and place into a bowl.

  2. Pour in the olive oil and white wine vinegar.

  3. Season with salt and black pepper, then stir until fully combined.

  4. Let the chimichurri sit for 10–15 minutes before serving to allow the flavours to develop.

Serving Suggestions

Serve chimichurri with:

  • grilled steak or chicken

  • roasted vegetables

  • crusty bread

  • sandwiches and wraps

  • grilled seafood

  • barbecue dishes

Tips

  • For a smoother sauce, pulse everything briefly in a food processor.

  • Add extra chilli for more heat.

  • Store in the fridge for up to 3 days and bring back to room temperature before serving.
